Salmon Mousse

salmon-mousseI am not a fan of any Salmon. People have told me it is because I have never had GOOD fresh salmon. I am not sure what their definition of GOOD & FRESH might be, but my fisherman father caught salmon and we ate it that night or the next day. When I was old enough to object no matter how it was cooked I avoided it and still do today.

For the Christmas Holidays I wanted to make appetizers for a party.
Someone suggested salmon mousse as a vegetable dip or on top of crackers.

juju1Well why not?
I really would not have to eat it myself now would I?

So I whipped up a batch from a modified recipe I found in an old cook book.

I was shocked at how good it was … maybe because it was made with cream cheese and lemon WHICH I LOVE.

So for all of you Salmon haters maybe this will work for you too … if not THE CAT that always has visions of salmon swimming in his head will probably love it and be more than willing to take it off your hands. 😉

Quick and easy salmon mousse. Drop ingredients into a food processor and let it do its job.

Ingredients
  1. 8 oz. Cream cheese
  2. 4 oz can smoked salmon
  3. 2 Tbsp lemon
  4. 1 tsp. lemon zest
  5. 1/8 tsp. cayenne
  6. salt and pepper to taste
Instructions
  1. Place cheese, salmon, lemon, zest, cayenne into the bowl of a food processor. Whiz until smooth. Taste and add salt and pepper if needed.
  2. Spoon into a piping bag with your favorite tip and squeeze onto crackers or vegetable rings.
  3. Garnish with small sprigs of dill, pimento, lemon zest or not at all.

  1. This makes about 2 1/2 cups
