I am not a fan of any Salmon. People have told me it is because I have never had GOOD fresh salmon. I am not sure what their definition of GOOD & FRESH might be, but my fisherman father caught salmon and we ate it that night or the next day. When I was old enough to object no matter how it was cooked I avoided it and still do today.
For the Christmas Holidays I wanted to make appetizers for a party.
Someone suggested salmon mousse as a vegetable dip or on top of crackers.
So I whipped up a batch from a modified recipe I found in an old cook book.
I was shocked at how good it was … maybe because it was made with cream cheese and lemon WHICH I LOVE.
So for all of you Salmon haters maybe this will work for you too … if not THE CAT that always has visions of salmon swimming in his head will probably love it and be more than willing to take it off your hands. 😉
