Pineapple Buttermilk Slaw Dressing
Cabbage is a healthy vegetable and easy to add to salad or simply shred for a simple coleslaw with grated carrots. For special occasions I like to add dry cranberry, chopped apples and cashews. Making this for parties always ends up with it being gone.
My go to dressing is sort of sweet and tart at the same time. I make this ahead and keep it stored in a jar for quick use.
- 1/2 cup mayonnaise
- 1/2 cup buttermilk
- 6 oz pineapple juice
- 2 Tbsp red wine vinegar
- 2 Tbsp sweet pickle juice
- 1/3 cup sugar
- 2 Tbsp dry onions
- 1 Tbsp whole mustard seed
- 1 tsp. sea salt
- 3 Tbsp ultra gel
- Whisk all ingredients together. Place in storage jar and allow to thicken before use.
- Keep your extra sweet pickle juice to spice up dressings or other sauces.
