My New Anova Sous Vide Precision Cooker
I am ever trying new things along with cooking using old tried and true methods.
My friend Samantha mentioned her son had taken a class at Culinary Arts and learned about Sous Vide. She thought it was delicious.
Ever curious I decided to look into it.
Next I found the most recommended unit on Amazon and in 2 days it arrived.
Here is what I ordered: Anova WiFi Sous Vide Precision Cooker, Black
So what is sous vide? … it is a method of cooking where food is sealed in airtight plastic bags then placed in a water bath that is temperature-controlled.
Meat is cooked at the temperature you want it to be done at.
Vegetables are cooked at a different temperature until done. Because the temperature is never higher than the done state it never overcooks even if it is left in the bath longer than necessary.
This method cooks your item evenly from outside edge to inside with no overcooking.
What you get is the most flavorful food that is juicy, tender and delicious.
When my unit arrived I had to try it out immediately. I do not remember where I got the chicken breast recipe now but it was simple. Seal the meat in a vacuum bag with butter and a couple sprigs of rosemary.
To be honest it was nothing to write home about and I thought I had made a $170 mistake.
I do not give up easily so I found a class on Craftsy and was delighted. The class was only a few hours and gave me everything I needed to know to love this new gadget.
I went on to make the best Filet mignon I have ever eaten. Then next I tried big beautiful porterhouse steaks.
OH MY GOODNESS! … I will never cook steaks any other way.
So simple, easy and delicious.
I have since made simple baby carrots seasoned with chopped onion, a little dill, butter salt and pepper. Then I peeled granny smith apples, cored and sliced them. added brown sugar, cinnamon and a little clove and butter. Sealed them in the vacuum bag and voila the best caramelized apple topping for ice cream. All wonderful.
When I get time I will add my favorite recipes here.
Meanwhile one of the best sources for sous vide is Chef Steps
They have everything some free some premium. So far I have just used the free section and it is excellent.
Another great recipe source is the Anove Recipe section of the Anove website.
If you get one of these machines let me know how you like it 😉
