4th of July Dinner for Two Solar Style
So in reality this is dinner for 4.
Here is what I did since the temperatures here are still pushing 111 degrees NO COOKING INSIDE no matter what.
I remain amazed at how much cooler the house is without heating the stove or oven. Unfortunate I did not discover this great All American Sun Oven… just a little sooner.
So first I set out my oven to warm up while I put the dishes together.
Today I am trying something new for me. A double decker pot.
For those of you interested in what cookware I use in this oven my favorites are

As you might notice I am a big fan of Amazon because I get FAST FREE shipping and have found their customer service to be excellent. I am also a price hunter and most of the time Amazon prices are comparable or better than the competition.
To me I factor in NOT WASTING MY TIME RUNNING HITHER THITHER locally.
I have 3 of these round pots and they come with lids so you can easily store leftovers in them. In the bottom pot I placed 4 chicken thighs that were seasoned on all sides with garlic granules, salt, pepper and Herbes de Provence. Then I drizzled with a little extra virgin olive oil (EVOO) and about 1/4 cup of white wine.
Placed one of my glass lids on the pot and put it in the sun oven to start baking.
Meanwhile I started my potatoes Au Gratin in my second Granite Ware pan.
This was super simple because one of my favorite PANTRY MUST HAVES is “Betty Crocker Au Gratin Potatoes”.
I just follow the directions on the back of the box but instead of using all water I mix it half and half with cream and add 2 Tbsp. Costco dry onions and 1/2 tsp. salt. After the potatoes are added to the cream sauce I top with about 1 cup of shredded cheese mix. I like the combination of cheddar and jack.
